This creamy potato soup recipe is the ultimate comfort food for fall time! Filled with simple ingredients, it is a quick dinner for busy weeknights for families.

  • It’s so quick and easy! Little prep is needed, and the entire meal from start to finish is 30 minutes! If you have a busy weeknight, this is a dish perfect for you. I love this meal because I usually have everything on hand and can avoid the grocery store.

Soup season is here! Our family eats soup year-round, however, this is my favorite time to whip up creamy soups to kick off fall. I first made this recipe after I just had my first daughter in late August, and it brings me back to that time of my life. It is a family tradition to make this at the start of every fall, and I’m so excited to share this with you all!

Because the ingredients are so simple, I want to emphasize the importance of having high-quality ingredients so they each can shine. Other than the potatoes, I would consider the milk the “heart” of this recipe to have the perfect creaminess. I used Darigold® FIT 2% Reduced Fat Milk for a few reasons. Since this meal is for my family, I love that Darigold milk has a nutritional profile with more protein and less sugar than regular milk. Darigold Fit is great for the whole family!

Alright, let’s jump into the recipe!

Begin prepping by peeling and chopping your potatoes into 1/2 inch pieces. I would cut them to the size that you would feel comfortable having your kids eat them! I chose to use russet potatoes, but you can also use Yukon gold, white, or red potatoes. Just make sure you cook them long enough! My tip is to ensure a fork can pass through easily.

Add the chopped potatoes into a large pot with 2 cans of chicken broth. Bring this to a boil, then cover on low for 8-10 minutes.

While this cooks, halve and dice an onion. If you are using fresh thyme, remove from stems and mince.

After the potatoes are finished, you will preserve 2 cups of the potatoes (potatoes only, leave the broth). With the remaining potatoes and chicken broth, blend until a smooth consistency. Try to let this sit for a minute before closing the blender so some hot air can escape! You can also put it in half at a time to not overfill the blender.

Return the blended potatoes to the pot with the potatoes you set aside. Add in your milk, salt, pepper, and thyme. Add in the cornstarch if your soup needs thickening! Let this simmer for 10 minutes.

Once your soup is done, you can add your favorite toppings. I love to use bacon and cheddar cheese. This recipe is so simple, but is packed with flavor! It’s such a staple for the fall season for our family.

Another bonus to this recipe is it’s a kid favorite. My girls love soup and it makes for yummy leftovers, too. If you have kiddos that tend to be more on the picky side, give this dish a try!

  • Measuring cup
  • 1/2 Teaspoon

Ingredients
  

  • 1-2 lb russet potatoes
  • 1 cup Darigold FIT Milk
  • 2 cans chicken broth
  • 1/2 onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1 cup cooked bacon
  • 1/2 cup cheddar cheese
  • 1 tbsp cornstarch

Instructions
 

  • Peel and cut potatoes into 1/2 pieces
  • Add chopped potatoes and chicken broth into a pot and bring to a boil
  • Cover and turn to low, cooking for 8-10 minutes
  • Remove 2 cups of the potatoes and preserve
  • Pour remaining potatoes and broth into a blender. Blend until a smooth consistency
  • Cook diced onions in olive oil for ~5 minutes, until they are soft and golden
  • Combine blend and preserved potatoes into the pot with the onions
  • Pour in Darigold FIT 2% Milk, salt, pepper, and thyme
  • Simmer for 5 minutes
  • Serve with bacon and cheddar cheese, or any topping of your liking
