Peel and cut potatoes into 1/2 pieces
Add chopped potatoes and chicken broth into a pot and bring to a boil
Cover and turn to low, cooking for 8-10 minutes
Remove 2 cups of the potatoes and preserve
Pour remaining potatoes and broth into a blender. Blend until a smooth consistency
Cook diced onions in olive oil for ~5 minutes, until they are soft and golden
Combine blend and preserved potatoes into the pot with the onions
Pour in Darigold FIT 2% Milk, salt, pepper, and thyme
Simmer for 5 minutes
Serve with bacon and cheddar cheese, or any topping of your liking
