If you are a lover of crockpots and chicken like I am, this is the recipe for you. My mom started making this a few years ago, and I have just loved it ever since! What’s even better, is that so does my husband! He is such a picky eater (okay, I am too!) so when I finally find a meal we both love, it is a great day! I think crockpots are a godsend and this meal is great for the fall time when you just need something to warm you up! This is our salsa chicken recipe so I hope I explain everything well, and I hope you try it out for yourself!
Now you can cook it to different ways. You can put it on low and it will take 6-8 hours, which makes it great for if you are at work. If you are going to be home and just cannot wait, put it on high for 4-6 hours.
After it has cooked for whatever time span you chose, it is time to shred, shred, shred! Pull all the chicken out and use two forks to start pulling it apart.
When you are finished shredding you now can add in the sour cream. Again, we only use half of the tub.
Next, you will need to mix in the cornstarch. I do this in a separate little Tupperware cup. I get 2 tbs of cornstarch and 2 tbs of water and stir it together. This helps thicken up the liquids and I think it helps with keeping it fresh longer for your leftovers.
I like to give everything one last big stir and make sure all the sour cream is mixed in. I try to take the chicken out at the last second, just so everything cooks in well. Now, we usually eat these as chicken tacos, but I also like eating it just as is. So, if you want to make tacos, quickly heat up some tortillas on the stove with a touch of olive oil in the pan. Or, if you want to be lazy like me put them on a plate in the microwave and you can warm up about three or four for about 15-20 seconds.
We like to put cheese on top because it seriously brings this meal full circle.

And that is it! It is such an easy meal to make + oh my word it just tastes out of this world. The salsa chicken also does great as a leftover, I usually put it in for about a minute in the microwave and it is just delicious! Today, I went to the beachfront with my kids.
