Potato Soup

Delicous, creamy potato soup the whole family will love!

Ingredients
  

  • 1-2 lb russet potatoes
  • 1 cup Darigold FIT Milk
  • 2 cans chicken broth
  • 1/2 onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1 cup cooked bacon
  • 1/2 cup cheddar cheese
  • 1 tbsp cornstarch

Equipment

  • Pot
  • Potato Peeler
  • Cutting board
  • Blender
  • Measuring cup
  • 1/2 Teaspoon

Method
 

  1. Peel and cut potatoes into 1/2 pieces
  2. Add chopped potatoes and chicken broth into a pot and bring to a boil
  3. Cover and turn to low, cooking for 8-10 minutes
  4. Remove 2 cups of the potatoes and preserve
  5. Pour remaining potatoes and broth into a blender. Blend until a smooth consistency
  6. Cook diced onions in olive oil for ~5 minutes, until they are soft and golden
  7. Combine blend and preserved potatoes into the pot with the onions
  8. Pour in Darigold FIT 2% Milk, salt, pepper, and thyme
  9. Simmer for 5 minutes
  10. Serve with bacon and cheddar cheese, or any topping of your liking
