Crocktober continues! I love using my crockpot, and I find myself using it even more during the colder months. My family loves to enjoy yummy pasta, so I am excited to share this recipe with you all! It’s more out of our “comfort zone” and quickly became a household favorite.
I have recently discovered Barilla Creamy Genovese Pesto, which is packed with flavor and allowed me to keep the ingredients simple. A little goes a long way with their 6.2-ounce jar and you’ll need one for this recipe! This pasta is filled with so much flavor, and truly the Barilla Creamy Genovese Pesto sauce is the heart of this dish.
To start, you will add chicken to the crockpot and season with salt and pepper. Then spread the Barilla Creamy Genovese Pesto over the chicken. Slice butter into thin squares and place over the sauce. Cover with lid and set to high for 4 hours.
When the chicken is in the last 30 minutes of cooking, begin boiling your pasta. I prefer egg noodles, but penne or fettuccine could be great alternatives. While the noodles cook, shred your chicken with 2 forks.
Add your noodles to the pasta, and stir to incorporate into the pesto chicken. You will then shake parmesan on top, and sprinkle the mozzarella cheese. (I say measure with your heart!) Cover with lid for the cheese to melt.
Once melted, serve and enjoy!

Ingredients
- 1 lb chicken breast
- 1 jar Barilla Pesto sauce
- 2 tbsp butter
- 1/2 tsp salt
- 1/2 tsp pepper
Items Added at the End
- 4 cups egg noodles
- 1 cup mozzarella
- 1 cup grated parmesan cheese
Instructions
- Season chicken with salt and pepper, and add to the crockpot
- Cover with the Barilla pesto sauce, and top with butter in small slices
- Cook on high for 4 hours or low for 6
- In the last 30 minutes of cooking, cook the noodles
- Shred the chicken and add in the cooked pasta and top with the cheese
- Cover the crockpot and cook for another 15 minutes for the cheese to melt, then serve.
