Over the past few years, I have really enjoyed finding my way around the kitchen. I am even getting brave enough to go completely off recipes and just experiment! That is how this meal came about. I had all of these ingredients on hand, and it made the most delicious chicken taco soup! This recipe is very flavorful, and can be customized depending on your spice level. Since I have little ones, I keep it very mild. But, feel free to use more spice and add in peppers— it’s delicious either way!
I put chicken in the fridge to thaw (we keep all our meat frozen until the day before I cook it) but didn’t have any ideas on what to make. I really enjoy quick meals, because you know mom life, and those that don’t require prep beforehand.
Also, I don’t like when I find a recipe and they mention using rotisserie chicken because personally I’ve never bought this or had it readily on hand when I’m already scrambling for dinner ideas haha! So here is a meal I made completely from the start and it was under 30 minutes.
I start off by turning my stove top on to medium high and drizzled olive oil in the pan. I had chicken tenderloins, but I think I would make it again with chicken breast because I find that easier to shred. Seasoned with just salt and pepper, I cook them throughly. While they cooked, I drained my cans of corn, black beans, and pinto beans.
Remove the chicken and shred. I normally set it aside on a plate just to make it easier. After shredding, I poured in a can of diced tomatoes, chicken broth, drained beans and corn, and chicken. I added half a package of taco seasoning and mixed.
When it came to a boil, I lowered the temp and covered the pan. I let it simmer for 15 or so minutes and served with shredded cheese and oyster crackers. That’s it you guys! Such an easy recipe and it was delicious. It’s also a great meal for our toddler because she loves beans and shredded chicken. It is just an easy meal for her to eat so I highly recommend if you have littles.
Recipe
Ingredients:
1 pound of chicken
Salt and pepper to taste
1 can of corn (drained)
1 can of pinto beans (drained)
1 can of black beans (drained)
1 can of petite diced tomatoes
1/2 package of taco seasoning
1 can chicken broth
1. Season chicken with salt and pepper and cook.
2. Remove from pan and shred.
3. Add in beans, corn, tomatoes, chicken , taco seasoning, and chicken broth.
4. Bring to a boil, then lower to simmer for 15 minutes.
